My son has lived with me for years. We are in Texas. His mom is in North Carolina. Our existing parenting plan does not have either of us paying child support to one another. She wants him to spend the last year of his childhood with her before he turns 18 in Dec '25. She said she doesn't want child support or anything else me. Is there a way for me to ensure she can't?

You and the mother can enter into a mediated settlement agreement to ensure that no child support becomes part of the bargained for agreement when modifying the prior order to change custody. Also, take into consideration as to what the minor child wants and the reasons behind it as he/she is one year away from becoming an adult.
